UPDATE
My new leaves are in and I'm set to have the "face lift" work done on the 20th. The plan is to stack the two pairs of add-a-leaves in there to raise the truck up. I don't know if I really did just get a bad set or if the rear of the 3T w/ slantback is heavier than the 3 SUV which is causing some compression of the leaves -- either way, two pairs of add-a-leaves should do the trick on the rear. Then, it's an easy adjustment to the t-bars to bring the front end up.
Does this sound reasonable?
Just so I know exact numbers to give the tech: I want to bring the front up and rear up to around 26-26.5" (measured from the center of the center cap to the lip of the fender) in the front and rear.
(Is that correct, Chris?) 
I'm not sure if my having 33" tires versus 35" tires would made any difference in these numbers...probably not, I would assume.
After that, hopefully we should be good and up to the height it's supposed to be.
